Lark Ruby Abyss No. 285 is an exceptionally rich and refined Tasmanian single malt, representing one of the most luxurious expressions within Lark Distillery’s Signature range.
Matured exclusively in first-fill Seppeltsfield Port and Sherry casks, including whisky influenced by rare Australian Port reserves dating back more than 100 years, Ruby Abyss delivers extraordinary depth, complexity and balance. The result is an indulgent yet beautifully composed whisky that highlights the distinctive character of modern Australian whisky-making.
The nose opens with generous aromas of stewed plum, raisins and dark fruit, layered with caramelised brown sugar and gently toasted nuts. The palate is full-bodied and velvety, revealing plum compote, blackberry, dark chocolate and smooth mocha, supported by buttery pastry notes and a subtle touch of Tasmanian peat smoke.
The finish is long, warming and elegant, with lingering flavours of spiced treacle, candied quince and richly seasoned fortified-wine oak.
