This 2025 edition is matured across a carefully selected cask combination of 50% ex-American bourbon barrels, 48% Port barriques, and 2% sherry casks, bringing layered sweetness and complexity. The spirit composition is 75% unpeated and 25% peated, delivering a subtle smoky edge without overpowering the whisky’s fruity and savoury core.

Tasting Notes

Nose:
Gammon ham with torched pineapple, salted prunes, strawberry jam on a salty cracker, almond oil, coconut macaroon, and a lift of spearmint.

Palate:
Salt-baked pear, wildflowers, lemon thyme, sultanas, cherrywood embers, cocoa powder, and pink peppercorn spice.

Finish:
A gentle puff of buoyant smoke, Himalayan pink salt, red currant cordial — beautifully sweet and salty with a dry, lengthy finish.
