Kanosuke Hioki Pot Still connects Kanosuke with its sister distillery and predecessor, Hioki Distillery, which has a long history of shochu production.
This whisky is made from a combination of malted and unmalted barley, distilled in copper pot stills at Hioki Distillery, and then matured at Kanosuke.
Maturation takes place in a combination of new American white oak, ex-bourbon and re-charred casks, creating a bright, buttery and layered style.
Tasting Notes
Nose:
Crème brûlée, vanilla icing, biscuit, apricot, plum, citrus, caramel, orchard fruits and fresh oak.
Palate:
Smooth and creamy, with marmalade, orange, vanilla, almond, custard, caramel sauce, toasted oak, cocoa and subtle green tea (matcha) notes.
Finish:
Vanilla, dry ginger and cinnamon, with a soft and gentle sweetness.
